Good morrow, fine friends! With the merry month of May upon us, our gardens and wild spaces bless us with an abundance of fresh fare. Here in Zone 4, our larders and pantries are bursting with the first gifts of spring, perfect for crafting meals, snacks, and drinks that nourish the body and spirit. So, roll up your sleeves and let's prepare some heartening sustenance!

Ingredients


  • Ingredients:

    • 1 lb ground turkey or lamb

    • 2 cups chopped fresh spinach

    • 1 cup dandelion greens, well-rinsed and chopped

    • 1/2 cup fresh peas

    • 1/4 cup minced wild garlic or ramps

    • 1 cup chicken or vegetable broth

    • Mashed cauliflower topping:

      • 1 head cauliflower, steamed

      • 2 tbsp butter or olive oil

      • Salt and pepper to taste



Preparation

  • Instructions:

    1. Brown the meat in a skillet and drain excess fat.

    2. Add spinach, dandelion greens, peas, wild garlic, and broth. Simmer until the greens wilt and peas are tender.

    3. Mash the cauliflower with butter, salt, and pepper until smooth.

    4. In a baking dish, layer the meat and vegetables mixture, then top with the mashed cauliflower.

    5. Bake at 375°F for 25 minutes or until the top is golden.
