Local honey to taste
Sparkling water for serving

Preparation
Instructions:
Make a syrup by simmering elderflower heads and mint in water. Strain and add honey while the mixture is warm.
Allow the syrup to cool, then mix with sparkling water in a ratio that pleases your palate.
